Row 7 Seed Company just announced a brand-new cabbage: Sugarcone. If you’re not familiar with the brand (and Allrecipes Golden Cart Award winner), it works with chefs and farmers to develop vegetables and grains with unique flavors. And Sugarcone is definitely unique.
This cabbage doesn’t taste like the traditional cabbage you’re familiar with. The new variety is naturally sweet, so you can expect a mild flavor without that sulfur-tasting bite most people associate with cabbage. And thanks to the ultra-thin leaves, you’ll get a sweet, juicy crunch perfect for a slaw, salad, or to sauté or grill for a delicious caramelization.
The head of the Sugarcone cabbage has more of a cone shape as opposed to other round varieties. “The pointed head transforms a simple roast or grill into a centerpiece,” said Liz Mahler, Row 7 COO, in a recent press release. “But more importantly, it cooks faster and delivers the cabbage experience you never knew you were missing.”
What are we missing? According to Row 7, it’s cabbage’s authentic flavor.
“We’ve spent decades prioritizing shipping and storage over flavor when it comes to cabbage,” said Row 7 founder Chef Dan Barber. “Sugarcone cabbage brings back what we lost—real cabbage flavor that’s naturally sweet, tender, and designed for taste, not transport.”
This cabbage is also smaller than other varieties. Sugarcone heads are only one or two pounds, making the produce ideal for smaller households and everyday cooking without excessive food waste.
Row 7 shared the news on Instagram and food fans and chefs alike flooded the comments section with excitement. One chef who already secured the cabbage said, “Just made some for my meal prep client today and it’s delicious!!”
“I just made a dish with it for dinner last night!” someone else wrote. “Grilled and covered in a harissa butter, it was so good!!”
The new Sugarcone cabbage is available now through mid-November at select Whole Foods Market locations in California, the Northeast, the Mid-Atlantic, and Texas—including Houston, Austin, and Dallas.
